Our tress are wintering over in our temperature controlled storage building. In April when when they are out doors and when they leaf out we will update our stock, take orders and begin delivery. Every day we get bowls of figs during the season. To save some for later we have been drying them. Start by cutting the stem off. Cut the fig in two pieces from top to bottom and arrange the pieces on drying racks. The figs are dried at 130°F for 12-14 hours. When they are cool, we vacuum seal them and put them in the freezer.
